Doug’s Fresh Salsa

Ingredients

1 bundle of Cilantro
1 ½ Garlic cloves
6 oz. Lime juice
8-12 (approx. depending on size) fresh, just-ripe, not overly-ripe Tomatoes
1 Red Onion (other onions may be used as substitute)
2 Green Peppers
¼ or up to 1 whole Jalapeno pepper (depending on desired heat)
Salt
Pepper
A food processor (not a blender) A blender will destroy the tomatoes and make them into a foamy soup.

Directions

  1. Take the Cilantro and chop off and remove the bottom half, where there is only stems, and keep the top leafy half of the Cilantro. It does not hurt anything to have some stems in the mix. Throw the leafy half of the Cilantro into the food processor.
  2. Add approximately 6 oz of lime juice to the Cilantro.
  3. Add about 1 ½ garlic cloves to the mix.
  4. Take a Jalapeno pepper and depending on how warm you want your salsa, add some or all of it to the mix in the food processor. I recommend approximately, ¼ for mild, or ½ for medium heat.
  5. Blend this mix for a minute or so, until the Cilantro, Jalapeno pepper and garlic has been thoroughly minced. (If you don’t have a food processor, you can use a blender)
  6. Take the mix and pour it into a large mixing bowl.
  7. Next, slice the tomatoes in quarters with a knife, removing the core, if you are so inclined, and place them into the food processor. You may have to do a couple batches of this, as all the tomatoes may not fit in at the same time, and fewer tomatoes at time will make for easier processing.
  8. Run the processor for only 5-10 second bursts and check it. You want the tomatoes to be diced up, but not too soupy. (Do not use a blender! If you don’t have a food processor, you will need to dice the tomatoes up by hand.)
  9. Pour the diced tomato contents into the large mixing bowl along with the cilantro mix.
  10. Dice the red onion into small to medium chunks, depending on preference, and add to the mix.
  11. Dice up 1-2 Green Peppers (after removing the core) in the food processor, should be diced to about the same size as the tomatoes, then add to the main mixing bowl.
  12. Add approximately 1 Tbsp. Salt, (depending on preference)
  13. Add approximately 1 Tsp. Pepper, (depending on preference)
  14. Mix the salsa with a large spoon.
  15. Place a lid on the mixing bowl, and refrigerate overnight.
